Your assumption is correct, Tiny Houses present greater challenges to walls systems than a normal house since they will be bounced down the highway. All that shifting and movement causes a lot of wear, so I would make sure whatever materials you use that you make sure they are at least flexible. Plaster board insulation may work fine to retain heat, but if you were counting on it as the air barrier to stop air leakage, no matter how good a job you do installing it you may only ever be one pothole away from a leaky house. And as for aesthetics, I think you probably would notice cracking in the drywall as well. If it were me I’d be going with batt insulation, and maybe a wood interior to avoid cracked drywall.
